Schwartenmagen – A German specialty made from a pig’s stomach or appendix, stuffed with various “scraps” of pork, including head meat, ears, tongue, trotters, skin, heart, and kidneys. What makes this specialty particularly unique is that every craftsman has their own recipe. Common additions include vegetables and dill, while many consider majoram an indispensable ingredient.
